
You may not be out in your winter garden gathering kale, as Barbara does here, but you can add Barbara’s recipes for Kale “Green Bites” served with Apple Chutney and Yoghurt dip–for vegetarians, vegans and other “foodies”. Savoury Green Bites with apple chutney and yogurt dip

These tasty morsels can be served as an appetizer with a chutney or other dip, or as part of a meal
Ingredients: * a bunch mixed greens – spinach, kale, swiss chard, beet greens etc, steamed, cooled and chopped
* 2 eggs, beaten
* 1/4 c good olive oil
* 1 c grated cheese (a mix of cheddar, mozzarella, feta)
* 1 large onion, diced and caramelized in 2 T olive oil
* Salt and Pepper to taste
* 1/2 c sesame seeds
* Enough bread crumbs or oat flour to make everything stick together
Instructions:
* Place first 6 ingredients in food processor and process well
* Pour into bowl and add the seeds and bread crumbs or oat flour to make a thick dough
* form into bite-sized balls and place on oiled cookie sheet
* Flatten slightly with a fork
* Bake at 350 until underside is slightly brown
* Serve hot with various dips such as apple chutney or yogurt dip – see recipes below
Apple Chutney

In a pot combine 2 lbs peeled and chopped apples
1/2 c chopped onions
1/2 c vinegar
1/2 c brown sugar
1-2 t chili flakes
2. teaspoons garham masala
Bring to a boil and simmer for a few minutes, until apples are soft but not mushy. Serve warm or cold
Yogurt Dip
Mix together 1 c thick plain yogurt with 2 t mayonnaise, 1/2 t dry dill, salt & pepper to taste
